GET COOKING THIS RICE IS RAW AND MUST BE COOKED TO UNLOCK ITS DELICIOUSNESS. 1. USING A FINE MESH SIEVE, RINSE 1 CUP RICE UNDER COLD WATER FOR 1 MINUTE AND DRAIN 2 COMBINE RICE, 2 CUPS WATER OR BROTH, AND 1 TBSP. BUTTER OR OIL (OPTIONAL, BUT VERY TASTY) IN A 2 QT. SAUCEPAN AND BRING TO A BOIL. 3. COVER WITH A TIGHT-FITTING LID. REDUCE HEAT TO MAINTAIN A LOW SIMMER AND COOK FOR 45 MINUTES. 4. WITH LID ON, REMOVE FROM HEAT AND LET STEAM FOR 10 MINUTES. FLUFF IT UP WITH A FORK AND DIG IN. SERVES 4-5. TIP IF RICE IS TOO FIRM AT THE END OF COOKING, NO BIG DEAL TRY ADDING 1-2 TBSP. WATER AND COOK FOR AN ADDITIONAL 3-5 MINUTES.
