GET COOKING THIS RICE IS RAW AND MUST BE COOKED TO UNLOCK ITS DELICIOUSNESS. 1. USING A FINE MESH SIEVE, RINSE 1 CUP RICE UNDER COLD WATER FOR 1 MINUTE AND DRAIN. 2. COMBINE RICE, 1 3/4 CUPS WATER OR BROTH, AND BUTTER OR OIL (OPTIONAL, BUT VERY TASTY), IN A 2 QT. SAUCEPAN AND BRING TO A BOIL. 3. COVER WITH A TIGHT-FITTING LID. REDUCE HEAT TO MAINTAIN A LOW SIMMER AND COOK FOR 15 MINUTES. 4. WITH LID ON, REMOVE FROM HEAT AND LET STEAM FOR 10 MINUTES. FLUFF IT UP WITH A FORK AND DIG IN. SERVES 4-5.
