WHOLE GRAIN BA BREAD FOR THE BREAD – 2 1/2 CUPS (240 G) WHOLE WHEAT EINKORN FLOUR – 1 TSP. BAKING SODA – 1/2 TSP. SEA SALT – 8 TBSP. (104 G) COCONUT OIL – 3 RIPE BAAS, CUT INTO 1/2-INCH SLICES – 1/2 CUP (105 G) BROWN SUGAR – 3 LARGE EGGS FOR THE GLAZE – 1/2 CUP (60 G) POWDERED SUGAR – PINCH OF GROUND CINNAMON – PINCH OF GROUND GINGER MAKE THE BREAD – PREHEAT THE OVEN TO 350 F. GREASE A 4 1/2 8 1/2-INCH LOAF PAN. – IN A LARGE BOWL, SIFT TOGETHER THE FLOUR, BAKING SODA, AND SALT. – IN A MEDIUM SKILLET, COMBINE THE OIL, BAAS, AND BROWN SUGAR AND COOK ON MEDIUM-LOW HEAT FOR 5 MINUTES, UNTIL THE BAAS HAVE SOFTENED. LET COOL FOR 10 MINUTES. – COMBINE THE BAAS AND EGGS IN A BLENDER OR FOOD PROCESSOR, AND PROCESS TO A SMOOTH PURE. FOLD THE BAA MIXTURE INTO THE FLOUR. POUR THE BATTER INTO THE LOAF PAN. – BAKE THE BREAD FOR 42 MINUTES. LET THE BREAD COOL IN THE PAN FOR 10 MINUTES, THEN UNMOLD THE LOAF AND LET COOL FOR 30 MINUTES. MAKE THE GLAZE – COMBINE THE POWDERED SUGAR, CINNAMON, AND GINGER IN A SMALL BOWL. ADD 2 TEASPOONS WATER AND MIX UNTIL THE SUGAR DISSOLVED. SPREAD ON THE TOP OF THE BREAD.
