OPTIONAL: TOAST THE GRAIN IN A DRY SKILLET BEFORE COOKING TO GIVE IT A DELICIOUS ROASTED FLAVOR. 3. COMBINE 2 CUPS WATER OR BROTH AND 1 CUP QUINOA IN A MEDIUM SAUCEPAN. 4. BRING TO BOIL. 5. REDUCE TO SIMMER, COVER, AND COOK UNTIL GRAIN IS TRANSLUCENT AND THE GERM HAS SPIRALED OUT FROM EACH GRAIN. 6. COOK ABOUT 15 MINUTES. 7. LET QUINOA STAND COVERED FOR 5 MINUTES, OR UNTIL LIQUID IS ABSORBED.
