RAW OATS REQUIRE SPECIAL PREPARATION TWO SERVINGS BOIL 1 CUPS WATER IN 6″ POT STIR CUPS OATS + TSP SALT SIMMER 10+ MIN. REST 2-5 MIN. IMPORTANT: RAW OATS HAVE ACTIVE ENZYMES. MIXING WITH NON-BOILING LIQUID TRIGGERS FERMENTATION, CAUSING NATURAL “OFF” TASTES AND SMELLS UNTIL DEVELOPING INTO SOURDOUGH STARTER (FOLLOW DIRECTIONS AND RECIPES ON OUR WEBSITE). TO PREVENT FERMENTATION, FOLLOW RECIPES ON THIS PACKAGE. CREAMIER OATS: BRING 1 CUPS WATER + 1 CUP MILK + TSP SALT TO LOW BOIL. ADD CUP OATS. SIMMER 20+ MINUTES, STIRRING OFTEN. TURN OFF HEAT; REST 5 MIN. MICROWAVE: BOIL 1 1/2 CUPS WATER + TSP SALT IN 4-CUP CONTAINER BEFORE STIRRING IN CUP OATS. COOK 5+ MINUTES, REST 2-5 MINUTES. OVERNIGHT OATS: ADD TSP SALT OR 1/2 TSP LEMON OR VINEGAR TO MILK. MIX 1 1/4 CUPS LIQUID TO 1 CUP OATS. CHILL 8+ HRS. BAKING: GRIND OATS IN PROCESSOR 2+ MINUTES TO MAKE FLOUR. USE 1:1 BY WEIGHT FOR WHEAT FLOUR. IF USING VOLUME, ADD 40% MORE OAT FLOUR.
